Instructions
Cook the Pasta
Boil water in a large pot, add a pinch of salt, and cook the penne pasta according to the package instructions until al dente.
Drain the pasta, toss with a little olive oil to prevent sticking, and set aside.
Prepare the White Sauce
In a saucepan, melt butter over low-medium heat.
Add the flour and whisk continuously for 1-2 minutes until the raw smell disappears (don’t let it brown).
Gradually add the warm milk while whisking to avoid lumps.
Cook on medium heat, stirring, until the sauce thickens to your desired consistency.
Flavor the Sauce
Stir in the grated cheese, garlic powder, nutmeg, salt, and pepper. Adjust seasoning to taste.
Combine Pasta and Sauce
Add the cooked pasta to the white sauce. Toss to coat evenly.
