- 6 Oz Pasta Penne or your preferred type
- 1 tbsp Olive Oil
- 1 no. onion Small-sized. Finely chopped
- 2 Cloves Garlic minced
- ¼ cup Vodka
- 1 cup Crushed Tomatoes or tomato sauce
- ½ cup Heavy Cream
- ¼ tsp Red Pepper Flakes optional
- Salt and Pepper to taste
- ¼ cup Parmesan cheese grated
- Fresh Basil Leaves for garnish
Cook the pasta: Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
Prepare the sauce: In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another 30 seconds.
Add the vodka: Carefully pour in the vodka and cook for about 2-3 minutes, allowing the alcohol to evaporate slightly.
Add tomatoes and cream: Stir in the crushed tomatoes, and bring to a simmer. Cook for 5-7 minutes, allowing the sauce to thicken slightly. Reduce the heat and stir in the heavy cream. Add red pepper flakes if using. Season with salt and pepper to taste.
Combine pasta and sauce: Add the cooked pasta to the sauce and toss to coat evenly. Let it cook together for a minute or two so the pasta absorbs some of the sauce.
