Pasta with Vodka Sauce

Ingredients
  

  • 6 Oz Pasta Penne or your preferred type
  • 1 tbsp Olive Oil
  • 1 no. onion Small-sized. Finely chopped
  • 2 Cloves Garlic minced
  • ¼ cup Vodka
  • 1 cup Crushed Tomatoes or tomato sauce
  • ½ cup Heavy Cream
  • ¼ tsp Red Pepper Flakes optional
  • Salt and Pepper to taste
  • ¼ cup Parmesan cheese grated
  • Fresh Basil Leaves for garnish

Instructions
 

  • Cook the pasta: Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  • Prepare the sauce: In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another 30 seconds.
  • Add the vodka: Carefully pour in the vodka and cook for about 2-3 minutes, allowing the alcohol to evaporate slightly.
  • Add tomatoes and cream: Stir in the crushed tomatoes, and bring to a simmer. Cook for 5-7 minutes, allowing the sauce to thicken slightly. Reduce the heat and stir in the heavy cream. Add red pepper flakes if using. Season with salt and pepper to taste.
  • Combine pasta and sauce: Add the cooked pasta to the sauce and toss to coat evenly. Let it cook together for a minute or two so the pasta absorbs some of the sauce.
  • Serve: Divide the pasta into two servings, sprinkle with grated Parmesan cheese, and garnish with fresh basil leaves. Enjoy!
