Instructions
Prepare the mashed potatoes
Roast the garlic by cutting off the top of the bulb, drizzling with olive oil, and wrapping it in foil. Roast at 400°F (200°C) for 30–40 minutes until soft.
Boil the potatoes in salted water until fork-tender (10–12 minutes). Drain and mash.
Squeeze the roasted garlic cloves into the mashed potatoes and mix with butter, cream, salt, and pepper.
Cook the steak
Season both sides of the steaks generously with salt and pepper.
Heat olive oil in a cast-iron skillet over medium-high heat until shimmering. Add the steaks and sear for 3–4 minutes per side for medium-rare.
Add butter, garlic cloves, and thyme to the skillet. Tilt the pan and spoon the melted butter over the steaks for 1–2 minutes.
Let the steaks rest for 5 minutes before serving.
Prepare the green beans
Heat olive oil in a skillet over medium heat. Add garlic and sauté until fragrant.
Add the green beans and sauté for 5–7 minutes, or until tender-crisp.
Toss in toasted almonds, season with salt and pepper, and serve.
Notes
