Pan-Seared Ribeye Steak with Garlic Butter

This classic American steak dinner for two is perfect for a romantic evening or a special occasion. Ingredients
  

For the steak

  • 2 Ribeye Steaks 8–10 oz each, about 1-inch thick
  • Salt and Black Pepper freshly ground black pepper
  • 2 tbsp Olive Oil
  • 3 tbsp Unsalted Butter
  • 3 Garlic Cloves smashed
  • 2-3 Sprig Fresh thyme

For the roasted garlic mashed potatoes

  • 2 Yukon Gold potatoes medium-sized, peeled and cubed
  • 2 tbsp Unsalted Butter
  • 2 tbsp Heavy Cream or Milk
  • 1 Garlic Bulb Roasted
  • Salt and Pepper to taste

For the green beans

  • 6 Oz Green beans fresh, trimmed
  • 1 tbsp Olive Oil or butter
  • 2 tbsp Almonds Sliced, toasted
  • 1 Garlic Clove minced
  • Salt and Pepper to taste

Instructions
 

Prepare the mashed potatoes

  • Roast the garlic by cutting off the top of the bulb, drizzling with olive oil, and wrapping it in foil. Roast at 400°F (200°C) for 30–40 minutes until soft.
  • Boil the potatoes in salted water until fork-tender (10–12 minutes). Drain and mash.
  • Squeeze the roasted garlic cloves into the mashed potatoes and mix with butter, cream, salt, and pepper.

Cook the steak

  • Season both sides of the steaks generously with salt and pepper.
  • Heat olive oil in a cast-iron skillet over medium-high heat until shimmering. Add the steaks and sear for 3–4 minutes per side for medium-rare.
  • Add butter, garlic cloves, and thyme to the skillet. Tilt the pan and spoon the melted butter over the steaks for 1–2 minutes.
  • Let the steaks rest for 5 minutes before serving.

Prepare the green beans

  • Heat olive oil in a skillet over medium heat. Add garlic and sauté until fragrant.
  • Add the green beans and sauté for 5–7 minutes, or until tender-crisp.
  • Toss in toasted almonds, season with salt and pepper, and serve.

Notes

Serve the steak with a dollop of the garlic butter, mashed potatoes, and green beans on the side. Pair with a glass of red wine for a perfect American-style dinner for two!
