  • 1 tbsp Cocoa Powder
  • 1 tsp Baking Powder
  • ¼ tsp Baking Soda
  • ¼ tsp salt
  • 1 tbsp sugar
  • 1 tsp Instant Coffee Granules or espresso powder
  • ½ cup Milk or your preferred dairy-free alternative
  • 1 Egg
  • 1 tbsp Melted Butter or Vegetable Oil
  • ½ tsp Vanilla Extract

For the Topping

  • ¼ cup Heavy Cream or Whipped Topping
  • 1 tbsp Powdered Sugar
  • ¼ tsp Vanilla extract

Optional Garnishes

  • Chocolate syrup or caramel drizzle
  • Whipped cream

  • Crushed coffee beans

Instructions
 

Prepare the Pancake Batter

  • In a mixing bowl, whisk together the flours, cocoa powder, baking powder, baking soda, salt, sugar, and coffee granules.
  • In another bowl, mix the milk, egg, melted butter, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined (don't overmix; some lumps are fine).

Cook the Pancakes

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  • Pour about 1/4 cup of batter per pancake onto the skillet.
  • Cook until bubbles form on the surface and the edges look set, about 2 minutes.
  • Flip and cook for another 1–2 minutes until cooked through.
  • Repeat with the remaining batter.

Make the Topping

  • In a small bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.

Assemble and Serve

  • Stack the pancakes on a plate.
  • Drizzle chocolate or caramel syrup over the stack.
  • Spoon or pipe the whipped topping over the pancakes to resemble a frappuccino's whipped cream.
  • Sprinkle chocolate shavings or crushed coffee beans for an extra touch.
