  • 1 Celery Stalk diced
  • 1 cup Chicken or Vegetable Broth
  • 1 cup Heavy Cream
  • ½ tsp Dried Basil
  • ¼ tsp Crushed Red Pepper Flakes flakes
  • 1 cup Fresh cheese tortellini
  • 1 cup Fresh Spinach Leaves
  • Salt and Pepper to taste
  • Parmesan cheese grated (for garnish)

Instructions
 

  • Prepare the Base: Heat olive oil in a medium-sized pot over medium heat. Add the onion, garlic, and carrot. Sauté until the vegetables are tender, about 5 minutes.
  • Simmer the Broth: Pour in the chicken or vegetable broth and bring it to a gentle simmer. Add the tortellini and cook according to the package instructions (typically 5-7 minutes).
  • Add the Cream: Lower the heat to medium-low and stir in the heavy cream. Let the soup simmer for 3-5 minutes until slightly thickened.
  • Finish with Spinach and Cheese: Stir in the fresh spinach leaves and cook until wilted. Add the Parmesan cheese, stirring until melted and fully incorporated. Season with salt and pepper to taste.
  • Serve and Garnish: Ladle the soup into bowls. Garnish with additional Parmesan cheese and fresh basil leaves. Serve immediately.
