Ingredients
  

  • 4 cups Tortilla chips store-bought or homemade
  • 1 cup Salsa red or green, depending on preference
  • 2 Eggs
  • 1 tbsp Oil
  • ¼ cup Crumbled queso fresco or feta
  • 2 tbsp Sour cream or Mexican crema
  • 2 tbsp Fresh cilantro chopped
  • 1 Avacado sliced
  • 2 tbsp onion thinly sliced
  • Salt and Pepper to taste

Instructions
 

  • Prep the Sauce: Heat the salsa in a medium skillet over medium heat. If the salsa is too thick, add a splash of water or chicken broth to loosen it up. Bring it to a simmer.
  • Add the Tortilla Chips: Gently toss the tortilla chips in the simmering salsa, ensuring they're well-coated but not soggy. Reduce the heat to low and cover the skillet for 1-2 minutes to allow the chips to absorb some of the sauce.
  • Cook the Eggs: In a separate pan, heat the oil over medium heat. Crack the eggs and cook sunny-side up, or prepare them to your liking (fried or scrambled). Season with salt and pepper.
  • Assemble the Chilaquiles: Divide the saucy tortilla chips between two plates. Top each portion with an egg.
  • Add Toppings: Sprinkle with crumbled queso fresco, drizzle with crema, and garnish with cilantro. Add avocado slices and onion if desired.
