Instructions

Prepare the Beef Filling

  • In a skillet over medium heat, cook the ground beef, breaking it apart, until browned.
  • Add the onion and garlic. Cook for 2–3 minutes, until the onion softens.
  • Season with cumin, chili powder, salt, and pepper. Stir well and cook for 1 more minute.
  • Remove from heat and let it cool slightly.

Assemble the Flautas

  • Warm the tortillas slightly in the microwave or a pan to make them pliable.
  • Place about 2 tablespoons of the beef mixture onto each tortilla.
  • Sprinkle shredded cheese on top of the beef.
  • Roll the tortillas tightly into flautas (like small taquitos) and secure with toothpicks if needed.

Fry the Flautas

  • Heat about 1/2 inch of vegetable oil in a skillet over medium-high heat.
  • Place the flautas seam-side down in the hot oil. Fry for 2–3 minutes on each side, or until golden brown and crispy.
  • Transfer to a paper towel-lined plate to drain excess oil.

Serve

  • Serve the flautas warm with sour cream, guacamole, salsa, or fresh cilantro for dipping.

Notes

Tips

  • Use leftover beef or shredded meat for a quick version.
  • Baking option: Instead of frying, brush the flautas with oil and bake at 425°F (220°C) for 15–20 minutes until crispy.
  • Customize with jalapeños, refried beans, or other toppings for variety.
  • For a lighter version, consider baking the flautas instead of frying to reduce the oil content.
