Prepare the Beef Filling
In a skillet over medium heat, cook the ground beef, breaking it apart, until browned.
Add the onion and garlic. Cook for 2–3 minutes, until the onion softens.
Season with cumin, chili powder, salt, and pepper. Stir well and cook for 1 more minute.
Remove from heat and let it cool slightly.
Assemble the Flautas
Warm the tortillas slightly in the microwave or a pan to make them pliable.
Place about 2 tablespoons of the beef mixture onto each tortilla.
Sprinkle shredded cheese on top of the beef.
Roll the tortillas tightly into flautas (like small taquitos) and secure with toothpicks if needed.
Fry the Flautas
Heat about 1/2 inch of vegetable oil in a skillet over medium-high heat.
Place the flautas seam-side down in the hot oil. Fry for 2–3 minutes on each side, or until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil.
Tips
- Use leftover beef or shredded meat for a quick version.
- Baking option: Instead of frying, brush the flautas with oil and bake at 425°F (220°C) for 15–20 minutes until crispy.
- Customize with jalapeños, refried beans, or other toppings for variety.
- For a lighter version, consider baking the flautas instead of frying to reduce the oil content.
