  • 2 tsp Milk or cream for extra richness
  • 1 tsp Butter

Whisk the Eggs

  • Crack the eggs into a bowl
  • Add the milk and a pinch of salt
  • Whisk vigorously until the yolks and whites are fully combined, and the mixture looks slightly frothy. This helps make the eggs fluffy.

Heat the Pan

  • Place a non-stick skillet over medium heat.
  • Add the butter and let it melt, coating the pan evenly. Be careful not to let the butter brown.

Cook the Eggs

  • Reduce the heat to medium-low. Pour the whisked eggs into the pan.
  • Let the eggs sit undisturbed for about 20-30 seconds until they start to set around the edges.

Stir Gently

  • Using a spatula, gently push the eggs from the edges toward the center, allowing the uncooked liquid to flow to the pan’s surface. Avoid over-stirring for larger, fluffier curds.

Finish Cooking

  • Continue stirring gently until the eggs are mostly set but still slightly glossy and moist.
  • Remove the pan from the heat a little before the eggs are fully cooked; they will finish cooking with residual heat.

Season and Serve

  • Sprinkle with black pepper and adjust salt if needed.
  • Serve immediately with toast, hash browns, or your favorite breakfast sides.
